According to Dan: The nights post within a week of spending, regardless of statement close.
They expire 12-13 months from posting and can typically be extended by 1 more month by emailing Hyatt.

Go to Hyatt.com make a reservation, click book, and before cc page you will see offer for card with the 2 free nights PLUS $50 statement credit. Looks something like this

Anniversary nights appear in account before annual fee posts.

I creates a new FFN before applying. Since my old FFN was registered at my parents' house, I just registered the new one at my house which matched the credit card application. Also I closed the other card about a year and a half ago.

Applied and was approved for the card last week, and my Hyatt status is still at 'Gold'. I'll be at a Hyatt tomorrow - was really hoping to have the platinum status to post so I can get an upgrade. How long after card approved should that switch?

Called - they claim you need 10 business days for it to post from chase. Asked for a status upgrade before that - but they would not do it.
When I got home after the trip had the card in the mail and platinum status on website - 1 day too late of course. Oh well.

Well, at least it looks like the platinum status took before my checkout, so I did get the 15% bonus points for the spend.
Looks like the status comes a day or two after the card is mailed.

Mine posted within 2 weeks of being approved so it's definitely possible but depends how fast you can do the spend. I also called right after I was approved and had them expedite the card

Interesting... creating a new FFN for an upcoming churn and changing address wasn't enough to create a new FFN. HGP error said I had a duplicate account. Went back and changed my email to +1@gmail.com and then it worked. Just something to know.
