Which Halachic authority says that not listening to medical professionals is ונשמרתם? On the contrary, vaccination is ונשמרתם.

If one caught the Anti-Vax virus, that's their problem, but don't claim it's for religious reasons.

In Louisiana IIRC the exemptions are; 1) medical 2) religious 3) philosophical.
As a school we can’t deny admission if a family claims one of these exemptions, however if there were to be an outbreak we can require them to stay home for the duration.

NY only has 1 and 2 (and they just repealed 2), so it makes it a lot easier I assume, but plenty of yeshivas don't allow 2. In fact, HALB was sued by parents who tried to claim 2, and they won in court: https://law.justia.com/cases/federal/district-courts/new-york/nyedce/2:2015cv07004/378877/25/. But that was only a specific ruling, that the parents in question were really coming from personal belief (which is not covered in NY) and not religion.
