Hot Bagels deserves tremendous credit for never hiking their prices. They're dirt cheap and cost around a third to a quarter of the competition.
The owner is a teiyere yid. He didn't even have a hechsher until not too long ago. People just trusted him.

It's not really that weird. It used to be common practice before everything became commercial. You wouldn't trust your neighbor in shul to make a kosher bagel? You wouldn't eat his homemade cake?

I know it's not really the right thread plus they are different types of restaurants but if you had to rate these what would be the order?
1) Izzy's
2) Kasai
3) Bison and Bourbon
4) Pardes

all are good. And you'll get 4-16 different answers, However, mine would be:

1) Pardes
2) Bison & Bourbon
3) Izzy's (food is really great at Izzy's, but ambiance of those above - real dishes/cutlery - has slightly more class)
4) Kasai

they are each unique in their own way. Pardes has unique flavors and top food quality, Bison & Bourbon has a great indoor/outdoor seating, interesting seasonings, and cocktails-summer vibe, Izzy's has amazing smoked ribs, wings, and real wood flavor, and Kasai has the food "show/performance". So, depends on uniqueness of food flavors, environment, ambiance, or quality, etc...  Can you do one per week?

Then Pardes all the way. I've yet to taste a meal or visit any restaurant where each dish surprises my palate with the unique combination of flavors. It's definitely an experience.
