Well you can see the giddel, shkiyas, gartel etc of the esrog, and freshness, "greenness", hight and thickness of the lulav...
And can post how many "flekken" there are ...
Like that we can see what ppl paying for...

ראשית עד שמוצאים אתרוג טוב,הדבר אינו פשוט כלל ועיקר
בודקים היטב את היחוס ואת המשפחה ממנו מגיע האתרוג: שאינו מורכב חלילה שאין בו פגמים, שהוא בצבע הנכון וללא שריטות מהילדות
לאחר שהאתרוג נבחר, עוטפים אותו באהבה גדולה שבעה ימים, בצמר גפן
כולם מלטפים אותו, מנשקים אותו מברכים עליו ומתפארים בו
אבל אחרי השבע ברכות חמותו חותכת אותו לגזרים, מרסקת אותו ועושה ממנו ריבה

That wouldn't explain why a day before the chag, the same goods sell for half price or less. You can always get deals.

I'll agree though that the groupon is just way too cheap for quality stuff.

You said in regards to esrogim "you get what you pay for". That's not exactly true if the same goods sell in a wide range of prices.

so erev yomtov would not be a good indicator of that. any rational person would want to get something for an item that will have zero value the next day

How about the fact that different sellers sell the same esrogim from the same orchard for various prices, some for much cheaper? What I'm trying to say is that the esrogim market is highly manipulated, the prices are highly marked up, and an esrog is not necessarily bad because you paid a lot less for it.
