If you're asking about a product change, I don't think it's possible. If you're asking about popcorn, nowadays it seems like pretty much anything can turn into PC.

If I open a chase Hyatt Card before the end of the year...will I get 2 Free nights + 1 Free  Annual Night (for 2016) and an additional 1 Free night for 2017? Or does the 2016 free annual night expire at the end of the year?

The annual night posts at the anniversary date, so you'd get the bonus and then have a year to go before the first free night.
