If based on pre covid, I would highly highly recommend checking before you get there, because I was there this summer, although not in those places, and almost all the kosher information from Sydney before pandemic was different, most restaurants closed and some opened new, etc. just make sure because nothing from pre pandemic could be reliable in terms of kosher in Australia.

For starters it seems like you start in Australia, per your post. But To where? Where do you want to go on the way? What did you have in mind by “with kids?” Is there somewhere the plane can’t go with your kid on board?

People wanting to not fly over the dateline. If you're lubavich, it messes with your sfira count, since they hold it goes by where you started. If you flew from Australia to the US, you'd celebrate Shavuos a day earlier than they do in the US since you repeated a day coming. Many refrain from crossing it during sefira for this reason.

Based on the advice I got from @dirah there is a fair chance that flights that go near the north pole may actually go on the other side, and in turn cross the dateline.Check the flight path history of the flight you are looking for, and see how close it goes.
