Regarding certain Yeshivos omitting different parts of kesubos, I believe that it is ok to choose to shtel on a different sugya and it might not be ideal for yeshiva bachurim to learn it b'iyun.
But when going though the masechta in its entirety it rings very wrong to deliberately skip selected pieces. After all, Torah is a "Sam hachaim" when learned correctly it cannot do any wrong.
(Unless it is being taught to a very young age - but how many that fit this category of immaturity are learning a whole masechta anyways?)
Besides, perhaps it is better that today's early teens get their information from such sources and not other easily accessible filth.
