There is no Kiddush involved. TBH I'm not exactly sure why its allowed* but its the way i was brought up.
Probably why we stick to שהכל
IIRC it's because laining is whats mechayev you to hear Kiddush.

yes, the break is right after Shachris on both Shabbos and YT including RH.

That's a machlokes, I won't speak more as I don't know much more,  but it makes sense that they are taking that opinion.

I think the רא״ש says since eating before Shachris is prohibited, the chiyuv to make kiddish is prior to ones meal and therefore only begins when it is the time of eating after davening. I believe it is unclear why (if) women can eat before davening without kiddish even though they are not mechuyav in Shachris and therefore obviously not prohibited to eat prior.

...and since you also cant (officially) really eat much between shacharis & musaf (not more than k'beitza of mezonos etc) some opinions hold that the "mokom seuda" can only happen after musaf and thats when chiyuv kidush starts.
a coffee before shacharis doesnt require kidush accordimg to most (all?) opinios.
ladies should not eat after the minyan reaches whatever point is considered chiyuv kidush
