I've rented 5 or 6 different RVs.  In every one there's a power switch to turn the water pump on or off. If you are connected to a city water source then you turn the water pump off because there's enough water pressure. When you draw from the freshwater tank in the RV you turn the water pump on. Just turn the water pump switch off before Shabbat. There's usually also a switch to control the automatic staircase that extends when you open the door.  I can't think of anything else that would be problematic for Shabbat in an RV.

So, you mean to say that theoretically I can leave the general power on all Shabbos and just shut the water power and door opening switch separately? That sounds great! I guess that means that you can have air conditioning all Shabbos if you'd like.
What about the fridge? I assume you wouldn't be able to open it on Shabbos....?

Why would it be different than the fridge in your house?
I wonder what people who type "u" instead of "you" do with all their free time.

Certainly seems like you've never rented an RV. Not sure how you expect to have an understanding of the systems and how they apply to Shabbos if you've never done this before. A discussion on the internet will only get you so far.

I've seen the opening the door trigger a light to go off under the RV, even when the door switch is off.
They would indicate that there is some circuitry going on even when the switch is off.
Might be good to also find the sensor that knows if the door is opened or closed

So block the sensor. Same for any fridge.

Only newer rvs have a lot of the issues. Im in a 6 year old rv and only fridge, and water pump are shabbos issues, which are easily remedied.

I actually am! Chabad in Anchorage doesn't actually put people up but they have a couple of RV hookups in their campus so we'll sleep in the RV bez"h but eat the meals on the campus with the Chabad folks and all other visiting guests.
