I'm no expert but I'm pretty sure you can't take someone's money to invest and go to the casino and lose it but investing it in a terrible real estate investment would be less incriminating

How so? The activity at issue probably violated the terms of the card and I take for granted that upon a thorough investigation Amex and any other card issuer would probably close their accounts (and any points therein would probably be forfeited), but that seems like a small price to pay for removing thousands of dollars in unauthorized charges.

if you authorized 20 swipes and after that he decided to swipe again you can still do a charge back on the last one and he will need to prove that one individually.
The fact that you gave him prior permission for the 1st one is not prove that you gave him permission for the unauthorized one.

Unless he has signed agreements with them or something like that.

Seems like a factual question subject to dispute. Additionally, all prior charges were only authorized with the expectation that the cardholder would receive the reimbursement to make the applicable credit card payments. Seems worth a shot at least before resorting to bankruptcy protection.
