In a way, this is very profound.

If you think about it, why do Frummies clamor for pizza right after Pesach? Doesn't it make a statement that says something like "We were severely deprived of proper food, and now we are pushing and shoving to get some"?

I think it has so much more to do with the fact that you're told you can't have it, as the line goes, "If I can't then I must"... I go weeks without Pizza but obviously I crave it so much more this week

The only point it makes is that people feel that Pesach has deprived them of normal food. The Yomtov which we proclaim as "Zman Cheiruseinu" makes some Yidden feel exactly the opposite.

Also, more Chumros = less Cheirus.
