I went for dinner and to a really nice roof top lounge and had the waiter bring over flowers (someone dropped them off for me) . Not over the top, just really really nice.

My situation is pretty different as we dated for ~1 year and didn't have a shadchan.  She had been asking me to get professional photos together for a while, so I relented and had her make an appointment.  I swung by the studio a few hours before our shoot and dropped off a dozen long-stemmed roses and asked them to incorporate them into the photoshoot, and I told them I'd be proposing.

I got down on one knee halfway through and pulled out the ring.  The best part is we have great photos of the whole thing.

I took a ferry ride up the East River and had my friends hang a big banner with "Will You Marry Me" from the Wards Island bridge at 103th Street.

Went in a Cinderella carriage...and didn't propose

Eventually proposed on a gondola boat where roses and apple cider were waiting (hey, it was during the 9 days!)

No ring of course, would've made things different I guess.
