I use Folgers coffee bags. Not great but infinitely better than instant, which I simply cannot get down. For shabbos I make do with this (I'm not a posek but no reason these should differ from tea bags). For Y"T I percolate using a melitta plastic cone (approved for Y"T by my LOR).
It doesn't quite have the same satisfaction as a hot cup of coffee when you wake up.
You can make a concentrated version and mix it with hot water. The flavor is much better than any other hot beverage you can make on Shabbos, IMO.
There's a coffee shop in lakewood, forgot the name, that makes bottles of highly concentrated coffee. Really good stuff.
The French Press. Mentioned upthread. That's what I'm talking about. Very easy to make yourself.
