Shouldn't this have the same status as a coffee maker on a timer, whom rav Schwartz from the crc of Chicago pasjens like the tzitz eliezer (2:6) that is forbidden?
Coffee is bishul, which is not allowed on shabbos under any circumstance, timer or not, before shabbos or not

Not always true. The coffee beans are usually preroasted. And if not how can one take it from a hot water urn then to make coffee?

Cuz there ain't no bishul in a kli shlishi. (i.e. it isn't considered bishul, but you do need to transfer to a second cup after you fill a cup from the urn).

I would have to argue on you about that one. coffee is pre-roasted which makes it cooked, there is no bishul involved.
But everyone their own, I am not a Posek, but that is what after looking into was the psak I got. For instant coffee straight from the urn is ok.

Not all coffe are made the same. Some (tasters choice?) are freeze dried.
