I think all chains you can book a suite (at a premium).
Hyatt can upgrade on C+P
Marriott can upgrade (5K for upgrade cert but often requires multiple certs)

What do you mean by "at a premium"?
You mean hyatt rooms booked only on c&p can be upgraded with points?
Marriott is 5k per night or stay? (I'm assuming you mean on a points stay)

Most have a separate award chart for for suites. At a premium=more expensive
C+P can use a diamond suite upgrade cert/6K points per night to upgrade
Marriot is 5K per night (but again I think it's usually 10K per night if not more)

So far I haven't seen anywhere that lets using only points except maybe Marriott.
For sure not Ritz Carlton.

Just looked around for a room in Flagstaff AZ no Hyatt or similar
Best where Hampton inn or Marriott but i cant figure who would burn 20-30k points for a room that cost about 100$

What am I missing?

Are there any free night vouchers that would be worth using in 3 star 100-150$ a night?

Depends on hotel cancellation policy. Look at your reservation it should say or contact the hotel

If a hotel tells me they will upgrade me, not at check in, (the exact wording was they will block me into a suite) will I see the upgrade on my reservation online?

Thinking of redeeming for hotel stay for first time.
Planning on going to Niagara for 2 nights in the summer, there are no Hyatts in the area and on SPG you can only use points for the lowest class of rooms, is there a way to get a better room either with points or as an upgrade to a points reservation? Or perhaps is there another way to get a nice room in another chain (maybe open a marriot card and use the free nights or something else)?

If you do stay at a SPG there, might be worth waiting as they are going down in category and can save you points..
