I have about 300k ritz carlton points. what would be my best option for redemption for a nice summer vacation somewhere in the u.s. or canada?

Marriott vacation package. http://www.marriott.com/rewards/usepoints/morepack.mi. Pick southwest and get a companion pass also.

If a book a stay at Marriott with a free night cert and cancel, do I get it back? Can I get it refunded into points instead of a cert?

Yes.
And I've seen it posted that it's possible but have never had luck with it personally.

Want to stay in Niagara Falls Canada. Which hotel offers the best view? From the pictures it seems to be Embassy Suites and they seem to have really nice rooms...Anyone with info?

Stayed at Sheraton on the falls had a really nice view.

Haha, thanks. I didn't see the year just the date and thought to myself "What a poor guy, it's been two and a half weeks and no one responded".
