Is there any reason for there to be a difference in the standard for hand shemurah or machine, given the current process for both? It’s interesting that people are fine with the machine ( those who eat non - chaburah machine shemurah)  but have a problem when the same standard is applied to hand.
There is basis for that in halacha. The chamimus al yidei eisek is described by some poskim as coming from the body heat of the hands. This would happen when hand kneading but not with a machine.

Which matza are you referring to? The one under the Hashgacha of Rabbi Hendel from Migdal Ha'emek? (IINM the bakery isn't actually in Migdal Ha'emek).
I've been waiting over 5 years with bated breath for someone to say that!

I wish I had that by me, these workers just sat there wasting time. (making me nervous on רא"ש too) we threw out on average more then a full batch per 18 minute count.

ouch...by us we have someone by the tables turning the paper between matzas to ensure that the bits stuck to the paper are not on the next matzah. He also insisted that the lady dividing the matza should be oisek with her other hand while dividing the dough. Someone else insisted that the mixer (which was me for a bit) wash his hands  between every batch-not just every 18 min. (A bit overboard imho)

Agree, although I had a better experience previously. I literally was telling the boss every couple of minutes about the workers just stopping and schmoozing, for way too long. Definitely got nothing close to my money's worth.

I fully agree that the tumult they made there was a choshen mishpat question and not orach chaim.
Again, I am not talking about a teviah in bais din. At what point did they realize? Would they have been able to arrange to go elsewhere at that point in the season? As a practical matter they would have been backed into a corner at that point. They did not walk away feeling that they got what they paid for and quite understandably so.

There are bakeries that go with 18 minutes all year except Erev Pesach. Erev Pesach the demand is so great they stop at 22.5 .  P.M. for names of Bakeries

Don’t forget to keep the goal in mind aka Rav Yisrael Salanter with the matzos. Not worth being yotzei one pshat in the shitas harosh, if it can’t be done binachas uvishalom...
