I’ve never heard of making it on the 7th day when the 8th was on Shabbos. Not that that’s proof of anything.

You can always eat gebrocks that doesn't require בישול.

That solves the issue if preparing food from one day of yom tov to another.

The question is if we are only concern about eating gebrokst, or if we also avoid making it.

Nobody said otherwise, but I thought what Dan was suggesting is Chabad Minhag (preparing gebrocks on the 7th day) was specifically about this years’ kviyus.

Halachically, if you use the hetter of 12 months etc. it's the same thing.

If Gebrocks is only okay (and encouraged) due to completing the entire Series of Chesed and the מאיר גילוי הארת המשיח, you wouldn't necessarily have those insurances on the 7th.

IOW, if you're looking for a Halachic basis to allow, you can definitely do it on the 7th. If your looking for a Kabbalistic basis to encourage, I don't know if those apply on the 7th.
