Even for those who don't eat it Gebrochs, I think it might be only after 18 minutes, just like when it's baked originally.

Some liquid make chametz faster than 18 minutes.

Overrated IMHO.
Either way, I get more than enough of that on the 8th day to last for a year. Def wouldn't want it more than once.

If the alternative is dry crunchy matzo for brunch...

Also a special mention to matzo cake. A bunch of matzos soaked in red wine layered with chocolate cream... Good stuff. (Again, considering the alternative...)

Officially, yes. Practically, not really. My mother never had any gebrokts recipes, and I don't like matzah brie, so the extent of our eating gebrokts was to put matzah in the soup, just because we could.

You can't eat any salads with Matza. Eggplant Salad, babaganoush etc.

I used to think so but then when we switched to non gebrokts I was pleasantly surprised. We have some great recipes. Half our baked items you wouldn't know where pesachdik even.
