At the same time, it’s not hard to find bottles $30+ that I don’t enjoy. I’m not an expert but based on personal taste there are wines in every range that I like/dislike. Do you feel like you can’t have an honest opinion about wine?

From anecdotal experience I've seen that real wine lovers will enjoy even a cheaper wine although they'll have a bigger appreciation for good expensive wines, while people who aren't that enthusiastic about wines -myself included- will disgorge cheaper wines and will find the expensive ones smooth and delicious. I always say that only real wine gurus are the lucky ones to be happy even with a $20 bottle.

Wine tastings don't work because there is residue flavor and the taste buds don't function well after drinking more than one type.

It's definitely true that some cheap wine is very good, and some expensive wine is very bad, but the price is usually a fairly good indicator of quality.
