Turning off breakers in my house is a pain. I'm going to replace a thermostat (3 wires, if that matters) - do I really need to turn off the fuse, or am I gonna kill myself?

By adapter do you mean you will be grounding it through the screw on outlet cover?
It has the option to screw it in, but it's my understanding that just screwing it in is not necessarily grounding it.
If the switch box is grounded and you it into the switch box then it will be grounded as well
If it's low voltage (it usually is) you don't have to worry about turning off the breaker
Is the thermostat connected to power or is it battery powered? If it is the latter (most likely IMO) then the 3 wires are low voltage and turning off the breaker won't do anything anyway
