Chickens taste better when cooked whole. Pickles taste better cut. Sandwiches taste better cut and bitten from inside. Meat tastes better sliced against grain.


Definitely a smoker is a personal choice, and what is better depends on what you are looking for.  I say it's a balance of goals, between: (i) making good food, (ii) making authentic BBQ, (iii) having fun with the maaseh of smoking, and (iv) convenience.  Items (iii) and (iv) don't only conflict, they directly oppose each other.

I opted for items (i) and (iv) so went PBC.  I would say WSM is also mostly a (i) and (iv) choice, but it brings in extra elements of (ii) and (iii), at a slight cost to (iv).  Maybe WSM also better at (i)--I have no idea either way.

Further to the above:

If all you want is good food, get a sous vide.

If all you want is authentic BBQ, get a huge offset smoker that you feed with split logs.

If all you want is having fun with the maaseh of smoking, again, get a huge offset smoker.

If all you want is convenience, use your oven.

I dont know enough to say inferior - that you should research - but I can imagine there is a difference. Pellets, offer a variety of different wood types, which is transferred to the food in flavor - a fun element of cooking with wood because you can change up the type of wood to get different flavors. I don't think you get that with lump charcoal, but maybe you do, and maybe it is more economical to cook on charcoal I am not sure. All I am saying is that, this would be the question to ask. 

I can tell you that I am mostly happy with my GMG pellet (mid-size)...

1st cut. Wrapped in foil after 3.5 hours till 12 hours.
They both just hit 204

Funny, I was on the phone with a traeger sales rep (here in Ukraine) about an hour before you posted this and he reminded me to make sure I vacuum the accumulated ash every so often... We have had a few flareups already due to grease buildup so it's important to clean the drip tray after every serious smoke session.

Is the fix to start with lower temp?
Change pellets? 
Add smoke box inside?

I have similar issue with my rt700, i switched to bear mountain pellets which helped a little and put it on low temp for about an hr. Still lacking the strong smokey flavour I'm used to from my wsm.

How can you eliminate pellets? I thought the heat source was the smoldering pellets

You add a smoking tube to the cooker but fill the tube with wood chips instead of pellets.
