I've had great experience in J/F (though also depends on ones kid). Some flights there were extra seats, others nothing extra, but most J/F seats can accommodate an adult and child (some even two adults) comfortably.

What I've flown so far.
I don't think i can even recreate all my flights prior to my kid. Just decided to start from the kid and go from there.

There's a really nice "day room" in the F lounge which is basically a mini hotel room, bed, bathroom, shower, mood lighting... Etc. They drive you in a bmw 7 series to the E terminal (they don't take you to the plane like lh) if you're departing from there. Other than that nothing special.

Already visited Dubai, hoping to find a stopover outside the Middle East somewhere. How would I book EK anyways? I was under the impression that AS miles were the best way and I don't have any.

I guess if I stop in Europe, then returning on the DL miles are the best bet to avoid YQ?

Yes you would need AS to fly on EK you can also use it from Milan to JFK and AS is not hard to get, just read the AS thread.
