Why is American Express widely accepted in Israel?

Purely out of curiosity, I'm curious why it seems everyone in Israel accepts American Express.

In Canada, there are lots of shops that won't accept it for payment, allowing only Visa or MC.
However in many dozens of shops in Israel (not in tourist areas) my AMEX is always accepted.

Is there a different credit card fee structure in Israel, or do Israelis just want to be paid regardlesss of how much is skimmed off?

processing fees in Israel are much lower as credit card fraud is practically non-existent

 I had my credit card number stolen in Israel. Most of the Israeli store receipts include your entire credit card number plus expiration. Go figure.

Processors in Israel charge much less because of Israeli cards. What is so hard to understand

The real reason is because Amex in Isarel is owned by Poalim Express therefor there is no different between Visa and Amex
