In terms of places to stay in Seville, a great place where we stayed was Las Casas de la Juderia. It was right in the middle of the old town and we could walk anywhere.
We also stayed at the Elliott in GIB. Driving from GIB to AGP is a really beautiful drive and I think it actually took us less than an hour when we did it.

Turns out newest rep says OWE
does exist still but pointed out all the flaws in my reservation why it wouldn't work. I forgot about those issues and obviously the previous rep didn't realize either. Now that we have it better organized, we realized I was passing through MAD too many times. You can only have 1 stopover and 2 connections within a city. Staying in MAD for 2 days to see MAD and Toledo counts as my stopover. Going then to BCN is fine. Then BCN-MAD-SVQ (no direct availability BCN-SVQ) is 1 connection and getting out of Spain requires leaving from MAD, so when I'm done I have to use my 2nd MAD connection to get out. I could obviously pick between BCN-MAD-SVQ and BCN-MAD-AGP, but Seville sounds better from people's comments. Will then have to rent a car SVQ-GIB and return to SVQ after Shabbos in GIB to catch SVQ-MAD-XXX.
