This recipe is for a 6 qt crockpot:

1 crockpot liner (this is very important for the final step)

1) Pour water under the crockpot liner so it doesn't melt onto the pot

This is only necessary with a Jewish brands not with Reynold's

I used to use the Jewish brands and I needed water but now I've done it every week for a while with reynold's and no water and have never had any issues.

Done
Absolutely delicious cholent.

Cholent unlike other foods don't have a specific recipe that makes it or breaks and amazingly there is no single ingredient that makes it into a cholent, whatever you mix in the cholent becomes a cholent
Needless to say that parve cholent goes into a different category

2 pareve  cholents stand out in my mind: a family friend used to make a delicious bean only cholent
Perhaps among my most favorite cholents is from a chassidish shul near me that makes pareve cholent. (As a rule the rebbe made no fleishig cholent in shul, yrs ago-not sure why) I’m pretty sure they serve it in shamayim.

im not so familiar with lamb in general and i want to make a lamb/no potato/rice Cholent

1. do i spice the cholent like i usually would?
2. dos it make sense to put a marrow bone in also?

Lamb is very fatty, I wouldn't put in a marrow bone.

If you dont like the thought of rice in your cholent, pea beans (AKA Navy beans or small white beans) are a delicious substitute. They also sort of give the impression of barley. Put a nice amount, approx equal to the amount of barley you would put. You will have to go less on the water, especially if you soak the beans overnight. If it is still too watery, an idea I used until i figured out the good water measurement, is to soak your cholent beans and then add some navy beans unsoaked to absorb the water.
Also, adding potatoes will help with that.

PS-a high ratio of pea beans to other (bigger) beans make an excellent cholent, even for cholents that also have barley.

And a general idea (not for gluten free necessarily) is to add some baby lima beans...
Turkey thigh makes a delicious cholent as well

If you don't like sous vide cholent cooking your food in plastic, you can line the pot with parchment paper and it works perfectly.

I've been wondering about that.  Parchment paper is obviously not plain paper - It's impregnated or coated with something.  How does cooking in that "something" compare with cooking in plastic?

I haven't noticed a difference in cholent at all. And in other cooking/baking, I think food ends up crispier with it rather than, say, foil. You can even use it in a frying pan.

My concern was the chemicals from plastic (and parchment paper?) that migrate from the bag into the food.

Well, the added use of parchment paper in my home stems partly from crunchy mom types concerned about plastic. Though, I wonder if they know that parchment paper is coated with silicone and is (sometimes) bleached?

A quick Google search says the silicone does not migrate to the food, though the first results are the parchment paper manufacturers, so take that with a grain of salt (unless you have high blood pressure).

Cholent Recipe for 2 (or 3)

You will need:
2 quart crock pot
Small size liners

Ingredients:
overflowing handful of barley
small handful of beans
2 medium potatoes (chunks)
1 smallish onion (diced) {2 sauted onion Cubes}
3 cloves fresh garlic  (sliced){2 garlic cubes}
1 Meat Packet*
Water to cover
salt
pepper
paprika
1 squirt ketchup
3 long squirts honey

*meat packet= when you buy meat, get kolichel (some places call it cholent melt-away) and flanken. cut the kolichel into 1/6ths and each flanken piece in half. Put one of each type into a small freezer bag and freeze.
I recently discovered the joys of onion/garlic cubes (see edits in bold) great for when you're in a rush (or not).
