I tried about a month out at which point they didn't want to confirm an ocean suite, but a couple of days before our arrival I emailed again and was confirmed.

I actually emailed the reservation manager, not the GM.

In regards to combining points from 2 Hyatt accounts, there is a once per 30 day rule. Is that rule for both of the accounts, or only the one account that's getting all the points transferred into ?

They are having issues do to the update and holidays but I called up and the rep did it manually if you need it expedited.

And, is it possible to transfer URs to a Diamond Member who has a DSU, book my first night with C&P and DSU through his account, and book the subsequent nights using my nights and C&P and stay in the suite?

that should work but there are no guarantees. they might make you leave after you c & P nights but I guess in your situation it doesnt hurt to try

You can use extra Hyatt points to upgrade.
I checked the daily rate for the first day, which is the only way to upgrade with points, and it's $500 before tax. It would be much cheaper to pay 12.5k UR and $150...
