This is complicated and in a few stages so it really needs step by step which will have to wait until I choose to waste more time on this.  :D

I agree that it's complicated and requires several steps, but that's exactly what they walk you through in the video. What's there to add beyond that?

To the OP - just watch the explanation again, but pause after each bit of explanation to make sure you understood it before moving on up the next piece.

I beg to GREATLY disagree.  There are eye opening, very deep chidushim on thinking for each step.  If you feel it is that easy, write it up and you will understand that it is not so easy.

What's your question? Not particularly easy to figure out the answer, but their explanation is very straight forward. That riddle series on TED-Ed is great. Not sure why there was no 'pause to figure out the answer' for this one.
In a case of 3, person A, B, and C. Assuming we're looking from the perspective of C. I think I understand. That is I make an assumption that I'm not green. So according to my assumption each other one sees one green eyed person and should leave in two nights. When they don't that means my assumption is wrong. Therefore I leave.

Now in a case of four, looking from the perspective of person D I'm having trouble understanding how to say the same thing.

It's the same process, you just need an extra day to confirm the additional info stemming from the added person. That's why with 100 people it takes 100 days.

Two is easy enough to get (eventually for some), three is the same process and you got it, just keep the same pattern going for four up to 100.  Remember, in the story they were all logicians so this was easy for them.  :D

I borrow $7 from Steven to buy the ticket and sell for $8. So I pay back Steven his $7 and I’m left with $1. Now I want to buy the same ticket for $9 so I need to borrow $8 from Steven to get to $9. Then I sell for $10. I pay back Steven his $8 and I’m left with $2.

Think of it has 2 separate transactions.

Buying at $7 to sell at $8 you got $1 net.

Now, buying at $9 to sell at $10, you net an additional $1.

You are now left with your $2 net.

Without thinking it through I'm assuming people would guess $3, since he started out investing $7 and ended up with $10. You have to notice that in the middle he's investing another dollar.

Of course it's $2 the math is done as follows $8-$7=$1, $10-$9=$1 that is 2 transactions that he eared $1 on, so $1+$1=$2. The fact that it was the same ticket makes no difference.
