A) if its considered a management position OT may not be an issue

B) even if its off the books you still have to pay min-wage and OT ask a labor lawyer but I think damages are 300% of the amount owed

C) when i worked at a kosher fastfood place there were some kitchen staff that worked hours like this, it was just considered the regular cost, that also means that any hours they didnt have to pay (like this week because of  Shavous) really cuts in favor of the employer
