Whitewater Rafting in Grand Canyon

Has anyone done this trip with kosher food?  I'd be interested in doing it but i'm not really sure where to start?

I'm extremely interested in such a trip, and would love if @Something Fishy would organize it. This trip has been done before by a kosher group (so maybe he's no longer interested? :)
