if you think theres a risk, you should probably not go further as not to be on shpilkes the entire time.
ive stayed at the sheraton sharm, nothing too spectacular, but comfortable.
cairo is great. a pretty long drive from taba border though.
The IDF has a number to call where they inform you of the exact security situation in egypt at the time of travel. they'll tell u if they recommend going and will take ur phone number and  call u to come back if they feel its no longer safe.
jus because there might be a risk for israelis, doesnt necessarily mean its not safe for americans

depends what your definition of overrated is
theres the pyramids and the sphinx, the cairo museum with the royal mummies, king tuts mask etc, and numerous hieroglyphics.
i would have loved to have more tme at the museum, visit the jewish sitessuch as the newly renovated rambam shul and a nile river cruise

Cairo definitely isn't overrated, i've been there once and its really loaded with amazing things to do. its very far from taba and you need a special visa to get there. may be worth flying. however, its definitely more risky than the sinai peninsula, which is relatively safe.

In sinai there are checkpoints every 5 feet. they keep track of every visiter. 4 sure safer then cairo. not worth arguing about.

Maybe northern sinai (the road to cairo). palestinians have no access to southern sinai.
