I've been using 10.7 for a while and recently just switched to itunes 11. I then tried itunes 12 which was worse IMO, so went back to itunes 11.
itunes 10.7 - PROS - standard sidebar, able to open playlists in new window, (easier to drag songs)
itunes 11 - CONS - got rid of sidebar (press crtl+s to appear), unable to open playlists in new window
itunes 12 - CONS - No sidebar, too minimalistic IMO, music player on top is too small
i will say that for an apple noob, itunes 12 seems to be the best. apple seems to have "appled" itunes in appearance which is fine for the new guys but for me, a user for 9 yrs, apple is just taking away essentials just for looks.
