I am flying TLV-ZRH-JFK-DFW on Wednesday
My connection in ZRH is 1h 55min in ZRH and 3h 4min in JFK is that enough time?

Plenty

Try putting in the confirmation number and last name in a partner airline website,  such as United, and see if it let's you select seats.
