Foe example,  the highest number on my cars speedometer is 160mph which needless to say is never go to happen.

My pediatrician used to tell me I'd grow to be 6'2" or 6'3". I think it's a motivational thing. "I know the car shakes when you hit 70, but this thing was built to aim for 160! Keep pushing, buddy!"

Interesting note some car manufacturers set their thermometer to show 1-2mph over the real speed, if you used an accurate phone or GPS you can see.

Because it gives the illusion of performance. My guess is that it's just marketing

Interestingly, a quick Google search actually seems to say that the NHTSA limited the top speed of speedometers to 85 mph from '79-'81 so that driving at the highway limit would give you the illusion that you're close to your car's maximum. Was repealed after only a couple years.
