If a kid doesn't know which shoe goes on which foot, statistically, they should get it right 50% and wrong 50% of the time. So, why is it that when they put on their shoes on their own, it's wrong 100% of the time?

Because it's not random. They know you told them it was wrong the last time, so now they're very focused on getting it right. Which means they will always get it wrong.
