Constant. There are two types of mashgiach, temidi, someone who is there always, they business can't open without a mashgiach, and a "yotze v'nichnas", meaning someone who "comes and goes", someone who drops in regularly at unannounced times.

What is the reaction when an Orthodox Jew finds out they ate trief? Is it physical, emotional or both? Is there an example a non-Jew could relate to?

I would think it's mostly emotional (that could lead to physical).

I'm not sure if this is a good example for a non-Jew to relate to the feeling, but imagine doing something you believe is 100% ok and mundane, only to discover in retrospect that due to ignorance beyond your control you actually did something you consider repulsive and immoral.
I've been waiting over 5 years with bated breath for someone to say that!
