Why do speedometers in cars show numbers that are wholly unrealistic 99.99% of the time? Foe example, the highest number on my cars speedometer is 160mph which needless to say is never go to happen.

My guess is that it's just marketingInterestingly, a quick Google search actually seems to say that the NHTSA limited the top speed of speedometers to 85 mph from '79-'81 so that driving at the highway limit would give you the illusion that you're close to your car's maximum. Was repealed after only a couple years.
