Sure, simplest option is to just book two one-ways. Or if you want it all on one PNR then I believe you can book using their “multi-destination award”

Booked an international flight (US-Israel) with Delta thru Chase UR. I mistakenly only put my wife's middle initial on her ticket thinking her passport only had the initial (so i.e M for Miriam). Will this be an issue? If yes; can I easily change it? Anything on the phone takes forever these days! Called Chase, I need to await a callback..........

They always warn that the travelers info on the ticket must exactly match the passport, no?

Middle names aren't an issue. Talking from experience.
You might have issues with TSA Pre or global entry but I don't think you will.

I never put my middle name on tickets, and never had issue with precheck
