Not sure why you think you will have to leave secured area without a combined ticket. As long as you have your connection boarding pass in hand when you deplane from your first flight,  you can go straight to the gate. The checkin agent should certainly check the bag through when you show him/her your connecting flight documentation  and once it's checked through it is the exact same as if it was on one ticket.

My only reason to leave the secure area would be to re- check my bag.... But I guess I should just tell the agent....

My experience has always been good with checking through bags - even with separate airlines as long as they have a bag checking agreement in place.

Do esrogim have to be declared bringing into JFK? And is there a limit on how many are allowed to be brought in?

I once flew domestic and the TSA agent broke the tip of my luluv as for some reason he had to check it.

Once came home from Israel and we declared the Esrog at CBP (GE - wasnt looking for trouble) and the CBP agent waved us thru

Before we get to TSA and CBP how would you pack it?

I had a Travel case, green hard plastic with foam or something to keep it on place. I saw it in many stores

Can I book a ticket for an infant alone? If yes, should I just book as an adult and change the year in his DOB?

(And no, the infant won't fly alone. Its just that I'm booking CX for me and the infant, and I need to use Alaska for one of the tickets and AA or BA for the other.)

Thanks. At what point do I give them the real DOB? When I check in online, or call and change it earlier?

Don't sure about online, but GDS has a type code INS, as "infant in seat"
