May I ask how you got enough miles for multiple tickets using UA card? I just signed up with a 40k bonus, which is good enough for only 2 x 1 tickets.
Who needs to spend on a UA card? You can transfer from chase!

No, that is harder to transfer miles to. I was able to book 4 tickets with points from the signup bonus and the remaining two flights I booked with cash.

arriving at ZRH at 9.40 am with  DL and checked luggage. separate flight out of ZRH to TLV. 65 minutes in between.
is there enough time to collect luggage and still make it to the next flight ? Outbound is either OS via VIE  pr Pegasus via SAW.

If you have to collect your bags forget it. If they can check you through and you can get your check in done ahead of time for the connection (probably more likely on Austrian) you can make it.  They book 45min natural connections through ZRH - though when you have to switch terminals via train it can be harried...

really with checked luggage 65 minutes is enough; what about passport control; cut off times for checking in bags; maybe passport control again; security?

Flew with DL last week from CDG on basic economy, I had my DL FFN on my ticket and got a free luggage for me and companion. The airport agent didn't know anything about it so I just went to the machine yo print my 2 tags, she was very confused.

If the bags are checked through already then there is no issue of cut off times. That's not to say that there isn't a risk that the bags don't make it and they will have to deliver them to you. I am pretty sure that you don't have passport control since you're not staying in the EU. There is a security check but we've made ZRH connections in 30 and 45 minutes on a couple of occasions. It's not ideal to do it this tight and there are no guarantees - and little margin for error - but it's certainly doable.

I have a AA tickets booked with avios. I’m hoping for a schedule change that will allow me to cancel. How much of a change would allow me to cancel?  Who would I need to contact for the cancellation? Would I have to call AA first or Just BA? Also, would I have to cancel before the departure time or can I do it a few hours later? Any help is greatly appreciated.

Most airlines will. Once you have the 2 tickets, call the airline to put a note that they are together, at the check-in you'll just have to remind them.
Note that in case of a delay or cancelation, you will not be refunded for the 2nd flight from the airline.
