No.
The invoice is for the individual item, but the cc gets charged the way you put it in/split it up at the time of placing the order.

Your concern is that if you order, say, an item for $11 together with an item for $9 and one item takes a few days longer to ship. They will charge your card as the items ship so that each individual charge is less than $20. For this AmEx offer, it's not a concern. The offer is worded this way:This means you can even order something for $5 today and order something else for $15 in two months and you will still get the credit as soon as the total charged to your card is $20.
This is different from some of the other AmEx offers (such as spend $75+ on your cell phone bill, get $10 back) that require the amount to be charged to your card in a single transaction.

I ended up with free onions, eggs, watermelon, apples... I got like $26 worth of free food, plus the $20 gift card, I actually made a dollar on the groupon deal!

Yes, by price. They just write on the voucher s/t like "May be used for equivalent...". In fact, you could use it for any item, even non-food (up to that value). Despite all the grumbling here about SC, in the store they are very pleasant and accommodating.
