On both of my recent flights I was not able to sit next to my wife. I would not even think of asking someone to change seats for something so trivial.
yeah, but don't forget most of the folk around here haven't been married anywhere near as long as you, they still want to sit near their wives

I guess we look at it differently. The way I see it he would be doing me a favor by changing seats. If he declines for whatever reason that does not make him a jerk.
  I assume the flight you were on wasn't 10+ hours. And if he had a reason it'd be a different story and if I was offering him the same seat it may be like why should he move, but I offered him a better seat with more room for him. And he stills said no.

I believe man has common decency in them and if they aren't willing to do a favor when it is to their own advantage to do it... They are acting like a jerk.

The length of the flight does not matter, what you consider a better seat does not matter or his reason does not matter. All that matters is you are asking him to do you a favor.

If you believe him not doing this favor for you makes him a jerk then nothing I can say will change that. Hopefully someone else was willing to change seats so the two of you could sit together.

Many pilots these days are armed (you can tell by how they pass security, often they show a special badge and skip the metal detector, same procedure for marshals)
