I plan on booking an AA award for 25k (first class NYC-LAX one way) that I could book on BA for 50k each way (better cancellation policy).

So I would like to hold it on BA, then cancel a month or so out and rebook on AA.

How often (Obviously its YMMV) do the seats go back to inventory?

Even within ba inventory itself, I have personally cancelled my own seats, and they did not open up again ever. I was refreshing every second as I cancelled them.

As a general indication, if lowest revenue fare class is 0 then it will most likely not go back to inventory, so its really not correct to say that it generally goes back to inventory. When the lowest revenue fare class is available then YMMV.
