I'm currently booked ewr-bru-tlv using sq, first segment is on UA. If the first flight is delayed I would try to get them to put me on the later nonstop

Yes but that possible, but will only happen once the ticket is under airport control, not in advance.

Other option is plan b but I am nervous I will land up flying back of the bus which is even worse on the new planes and only middle seats left, not even two together

There are several different ways to get space that are shareable, fyi

1) book connecting flights on partner airlines and if schedule changes screw your trip, force them to put you on UA metal.

2) transfer in points for a phantom LH (or other phantom space) flight then call and cry that you transferred your points for this trip and get them to put you on UA metal
How could you confirm its phantom space without calling?

I'll look for phantom space, of course I'm risking that I'll transfer the points and then they won't open the space but probably worth the risk

I find it surprising that UA would do that (though they definitely on occasion do), since they technically can reverse a transfer (though obviously they don't typically).

Probably easier to just give you the seat than to reverse the transfer (I could be completely  wrong here)

If there is a relatively similar award flight available on another carrier I would assume that they would tell me to book that one instead? Or they wouldn't necessarily?

Lol just hoping that someone who has actually tried the process themselves could give me more info about how it went. I'm not either taking it for granted that they'll agree to reverse the transfer
