The official don't match but you can sometimes get them to give you a goodwill credit.

Nope. These aren't targeted offers, they just pop up for new users sometimes, so there's no way of ever guaranteeing that they'll be there.

I applied for the everyday card with the 25k link. Problem is I have no screen shot of the offer and I have no clue if it was 1000/2000/3000 spend. In the op's post its $2000. Is that standard for the 25k offer or has it been different for everyone?

That's what i got online, and I'm the mail. I'd be surprised if anyone got different.

They will also tell you the details in chat, and in that case you can take a screenshot and save it for later.
