Yes and yes. A little buggier than usual though, may need to do it after a fresh restore before restoring your backup.

Make sure you back everything up to iTunes and/or iCloud. You must do the update to iOS 9 through iTunes if you did the ota update you cannot jailbreak, you will have to restore it first through iTunes.

I'm not familiar enough with rooting to answer, but the point of jailbreaking is to free your phone from Apple's prison. It allows you to modify and tweak the core os which is normally locked. The tweaks and apps you can get are endless, the downside is a possibly slower phone depending on how many and which tweaks you install.

What does updating / jailbreaking have to do with Discover Cashback?

Devices using lower versions of iOS should be able to get the 10% (or 20% for some), as well as if the devices aren't jailbroken. Last I checked, the bonus was for using Apple Pay in-stores.

Don't get me wrong, I've been jailbreaking for years. Just not sure where you're going with this thread.

Bloatware is apps that comes with the phone that you can't  delete them,  i assume after I'll jailbreak it I'll be able to get rid of them.

I'm aware of what bloatware is, I just wasn't sure which apps specifically you were referring to. But yes, I'm sure if you search through cydia you will find a tweak to remove them.

Much simpler to just put all those apps in one folder and hide it (put it on the last page).
Unless you don't use the stock apps and want the default to open your app choices (Mail, Browser, Maps etc.), then you might want to.
