I'm a little concerned about overwhelming the agent. The purpose is to be able to make it quickly, which is why we specifically set it up to automatically update the flight info. Bags and meals can be added in the notes section.
I've been advised of a workaround for the time being. Leave any 1 field blank (either date, airline, or flight number), and a blank form will roll out. You can then fill in all the information manually.

The question was, for a flight that isn't in the database how to put the flight info in manually. That's how

What do you think about putting the box with Confirmation number, ticket number etc above the flight box. An advantage would be if there are multiple segments it doesn't have to be broken up by the confirmations box.
How would I put a baby in arms? just as another pax? Is there anyway to note that it's not a fully paid pax?
