i've once heard from a mashgiach that since the letter "k" can't be copyrighted, it means absolutely nothing.

That's true
it means absolutely nothing.
Well what it usually means is that the company thinks it's kosher. You can't rely on it, but a qualified kashus organization would know. Pepsi and GM cereals (to name a few) only had a K for years and was under the OU. I'm not saying eat it, I'm saying you have to ask.

Things may have changed in the past 15 years, but Welch's was definitely kosher (90% sure it was by the OU) at some point

Welch's was kosher for a short period of time but no longer is AFAIK.
And a K on Kellogg's cereal is generally considered to be a good hechsher.

I've heard so as well. But why do they only go with a K? Is there a story behind it?

I'm sure if the K on kellogs is kosher, its not because the K means anything. it must be because some kashrus orginazation says its kosher. so then why can't they just put their hechsher on it instead of the K?

From what I've heard, in Europe very few commercial foods have a hechsher on them. For whatever reason, some companies don't want to put the symbol on their products. They might be afraid that anti-semites would boycott their products.

It cost money, and perhaps they don't want to pay it.

From what I've heard, they put a k because sometimes, the hashgacha changes and they don't want to need to have to re-design a label and repackage everything just because of a 'minor' kashrus symbol. So they just always leave a k and design packaging with a k and if the kashrus organization behind the k changes, who cares.

Kellogs is kosher not  because of the k, rather whichever ones were checked into and found to be ok (which I think might be the ones with a k) I recently read that welchs tried being kosher but were not succesfull at breaking in to the market due to taste preferences (people are used to the heavy sweet grape juice, ever tasted israeli GJ? :) ) In conclusion Welch's is no longer certified and cannot be used under any circumstances (as grape juice has major issues of stam yeinom and yayin nesech so if there's no supervision, you've automatically got a problem).

I once bought Special K for a yeshiva i was a shliach in, and the stupid chassidish kids told the menahel i bought food without a hechsher, and the guy didn't really give a damn, just used it against me the next time it was convenient.
Bottom line, i called someone up (nathanson i think) and he said its under vaad rabannim of massachusetts i believe, although i take no responsibility as i don't remember the details so well. And i never figured why the kids cared if the staffs food they stole was kosher. unless the heter of R. Moshe....

Buy some smirnoff. much more available than welchs
as grape juice has major issues of stam yeinom and yayin nesech so if there's no supervision, you've automatically got a problem
How can you ever be meikel on this? worse than...
