Should I stop in rome or paris on connecting flight

I am booking a flight TLV to JFK. 
Which is the easiest airport to transfer planes with a short stopover time paris or rome?
If I go airfrance and then transfer to a delta flight does that make the change any more difficult? Different terminal?
Will I need to go through security?

IME I had to change terminals, go thru security again and take a tram in both airports.

What airlines? 1 ticket or 2?

If flights are booked as 1 itinerary (or luggage not a factor) then,

Minimum connection time in Rome (Alitalia to Alitalia) is 45 minutes.
Minimum in Paris (Air France to Air France or Delta) is 1 hour.

Is there any airport where you don't go through security when connecting after arriving from an international destination?

Air France and delta are the same at CDG. You might have to transfer "terminal" (it's actually not a different terminal as all SkyTeam ultra schengen leave from terminal 2E but 2E is divided to 3 parts, gates K, L and M), there's a train every few minutes that go from one to the other. I don't think that you're able to know in advance which gate you'll arrive/depart.

Overall I think that connecting internationally at CDG is very smooth.
