If an airline has 1 ticket available for $300, but if I enter 2 tickets and it's $700 ($350/person), does anyone know if I should make 2 separate 1 ticket purchases and assume that the first ticket will cost $300 and the 2nd will cost $350, or does that not matter?

Yes, it usually means that there is only one ticket available in the lower fare class.

2 separate. It's why Dan always says to start at 1 ticket and work your way up.
